What "home-style paella" means for an event
When someone looks for home-style paella for an event, they don't usually mean someone cooking it at home, but the opposite of industrial catering: rice cooked to order, with its own stock, for that specific group — not reheated trays from a catering company.
How to tell them apart when getting a quote:
- Ask who's cooking. A home-style one has a named paellero, not a faceless supplier.
- Ask about the stock. If they make it themselves, that's a good sign; if it comes from a carton, it's volume catering.
